What is the difference between the two Zelda quests?

After you beat the original Legend of Zelda, it mentions starting a new quest. To my understanding, there are some differences between the initial quest and the second one. What are they?

I only know about how Link is the hero and everything, but really, whats Zeldas and sheiks role in the story? I never see them in the commercial for the games, and from what I know Link isnt trying to save Zelda or anything?

Why is it the Legend of Zelda when its 100% Link? Shouldnt it be the Legend of Link or something ?

okay well my brother gave me The legend of Zelda: the windwaker and I am completely addicted to it. What are some other Zelda games like this one? (new games not the old ones) and what are some games similar to these?
